We may have something in common, the love for food. I love to eat and I love to cook. Some people don't eat what they cooked. They said they lose their appetite just by tasting their cooking. Not me. I eat what I cook.
You can save some dollars if you really know how to cook and bake. You could still go out, at least once a week, but preparing your own meal is more convenient and budget-friendly. Here is one economic-wise recipe that I would like to share.
You will need:
1. Left-over meat (either grilled or fried sausage, chicken, ground beef or shrimps)
2. Frozen corn
3. Green or yellow bell pepper
4. Tomatoes
5. Lettuce
6. Egg
7. Chili powder or taco mix, if you have one
8. Hot salsa
9. Tortilla
Preparations:
Cut the meat into small cubes (if you are using ground beef, no need to dice it). Also, cut the bell pepper and the tomatoes into small dice. Shred lettuce or you can just cut it into strips.
Heat the skillet and add a little oil. Scramble the egg. Set aside when it is done. Dump the cubed meat and add chili powder or taco mix (it depends on how much meat you have on). Add bell pepper. Saute for at least 5 minutes. Then you can add the scrambled egg and the frozen corn, stir them all together until its done.
Now, damp a clean cloth. Flat one tortilla on it and put 2 scoops of filling (depends on how much you want it), then fold the tortilla. Wrap it in a damp cloth and microwave it for 2 minutes. After that, you add tomato, salsa and lettuce. Wallah! You have your home-style burritos, all from scratch. You can save the rest of the filling if you cannot finish it in one sitting. You can have it for snack.
Note:
When I made my home-style burritos, my ingredients were all left-overs. I had scrambled eggs that morning, I did not finish it so I put it in the fridge. My husband had tacos last week, he did not finish the ground beef seasoned with taco mix, so I put the rest in the freezer. I didn't have green bell pepper but yellow bell pepper, so I used it. I love rice but I don't like rice in my burritos (that's how restaurants serves their burritos), and since I don't like rice in my burritos, I used frozen corn, instead, and it's really good.
Whenever I prepare burger or sandwiches for my husband, he only wants the middle part of the tomato, so I would always save the top and the bottom part, that's what I used on my burritos. I mixed in the tomatoes with salsa, so I could only use a little bit of the salsa. The tomato will absorb the taste of the salsa.
In microwaving, Instead of putting just one tortilla on a damp cloth. I put three tortilla with filling in it, so that I could save more time and electricity.
