How To Make Spiced Apple Drop Cookies

Choose from any number of drop cookie recipes, but this Spiced Apple Drop Cookie Recipe will bring a smile to the face as fast as you can take them from the oven. The aroma of the nutmeg and cloves coming from the oven will make your mouth water in anticipation of taking the first batch of these cookies out of the oven. You probably won't even wait for them to cool before taking a bite. Here is the recipe, so start baking.

Spice Apple Drops

Ingredients:

½ cup margarine

2 cups all-purpose flour

2/3 cup sugar

2/3 cup packed brown sugar

1 egg

¼ cup apple juice or apple cider

1 teaspoon ground cinnamon

½ teaspoon baking soda

½ teaspoon ground nutmeg

1/8 teaspoon ground cloves

1 cup finely chopped apple

1 cup chopped walnuts

Apple Frosting

Lightly grease a cookie sheet. Repeat greasing the cookie sheet for each batch of cookies. Set this aside. In a large mixing bowl beat the margarine with an electric mixer on medium to high speed for about 30 seconds or until soft.

Add about half of the flour to the margarine. Add the sugar, the brown sugar, the egg, half of the juice, the cinnamon, the baking soda, the nutmeg, and the cloves. Beat this until thoroughly combined, scraping the sides of the bowl occasionally. Then beat or stir in the remaining flour and the remaining apple juice or cider. Stir in the chopped apple and walnuts.

Drop the dough from a rounded teaspoon 2 inches apart on the prepared cookie sheet. Bake in a 375 degree oven for 10 to 12 minutes or until the edges are lightly browned. Cool on the cookie sheet for 1 minute. Remove the cookies and cool on a rack. Frost with Apple Frosting. Store the iced cookies in the refrigerator. This recipe makes about 40 cookies.

Apple Frosting

In a medium mixing bowl, beat 4 cups of sifted powdered sugar, ¼ cup softened margarine, 1 teaspoon vanilla, and 3 to 4 tablespoons apple juice to make a frosting of spreading consistency. This will make about 1 ¼ cups of frosting.

Be sure to bake several batches of these delicious cookies because they will not last long after you take them out of the oven.
